Soaking nuts and seeds stimulates the process of germination. This soaking neutralizes phytic acid, a substance present in the bran of all grains and seeds that inhibits absorption of minerals like calcium, magnesium and zinc. Soaking also neutralizes enzyme inhibitors present in all seeds. i.e. leave some seeds in a shed and they will be fine for years preserved naturally, soak them to break these enzyme inhibitors etc and they will go moldy in days. Un soaked they are a strain on the digestive system.
