Swedish Almond cake

3 large eggs
165g caster sugar
150g ground almonds

Beat eggs and sugar for 5-7 minutes (until really pale and thick)
Add almonds on low speed
Bake in loaf tin lined with grease proof paper for 30 minutes at 170°C

I needed to cook mine a bit longer I checked every 5 minutes and found 40 minutes total to work well (tooth pick inserted into middle of cake comes out clean or with a few crumbs).

The cake isn't that almondy so I pricked it all over and sprinkled on Disaronno (Ameretto) you could put some almond essence in instead if you wanted.

I have a chocolate almond cake recipe which I made 2 days ago that comes out like chocolate brownies! I will type it out for you later (this recipe is much longer - but much nicer!!!)
