You seem to be well organised - this is probably the biggest hurdle to overcome with the NSD/LSD. A few points:
- with regards to sausage, a lot of sausage is prepared with flour before they put it in the skin. Any meats that are "natural" i.e. steak, chops etc, are OK. Mince you will have to look on the label but most I think is just 100% minced meat.
- re. eating out its a good idea to always contact the restaurant or a friend (if eating over) to make sure you can eat a proper meal. Don't worry about being a bit difficult - it is a bit uncomfortable at first to be doing this but you will get used to it - the goal is to get better and if you explain that this is because of a medical condition most people are quite OK.
- dairy can be a major prob. with some people. I would look at only eating mature cheeses and substituting soy milk for cows milk for the first month or so. I think its a shame if people are so committed to the NSD only to find out after a long time that they should have cut dairy also. You can always reintroduce it.
- you didn't seem to mention eggs. They are a great breakfast thing for omlettes, etc.
- as a help, you should also try to plan out what meals you will prepare, eg breakfast, lunch, dinner, snacks.
