Dear Amanda,

What a thorough person you are! I am impressed! You sure know how to do your homework!

I know what you are feeling when you think of meat with no sauces... we human beings like sauces, don't we?! I still use Worcestershire sauce some and A-1 sauce some. I have tried to cut most barbeque sauces just to be safe.

I have a recipe for a very yummy rub (mixture of spices that you rub on raw meat and let sit in frig, then cook after it marinades) that doesn't contain any starch. I've got steak sitting in my frig right now that we are going to enjoy for dinner tonight that I used this rub on. Just let me know if you'd like the recipe. It is good on either chicken or beef.

I would encourage you to look for Elaine Gottschall's book, "Breaking the Vicious Cycle." It's written for people suffering from irritable bowel/colitis, but it is all about eating starch free foods. It really helped me to understand a little better just what it is that I'm trying to do and why. I was able to check it out at the public library, but I am hoping to purchase a copy for myself soon.

It is very overwhelming for the first few weeks to go grocery shopping. Suddenly you are struck with the realization that almost EVERYTHING on the shelves is starch-laden! It was a blow for me to realize that I could only shop from about 1/8 of the store. But, I am getting very accustomed to the idea now. It is never a good idea to shop when you are hungry, but I have found that it's even more dangerous now! If I'm hungry AND feeling deprived, my chances of intentionally buying something starchy are MUCH TOO high!

Anyway, good job on your mental preparation... I think you're going to do really well! Just be prepared to be at a loss for what to eat on ocassion. Don't get discouraged if and when you feel it is just too hard... hang in there! It WILL GET EASIER!

Take care,

Sharon

P.S. Stay away from all flours except almond. If you'd like some internet links for purchasing it, just let me know... I've got a few sites in my favorites I could send your way.
