Have you gals tried Kale Chips yet? They are better than a potato chip because Kale is so darn good for you. They are just as light and crispy and you can season with olive oil, salt, herbs and also nutritional yeast if you want. I think Kale Chips are usually the #1 reason I hear people first by a dehydrator! My (eat anything they want) co-workers LOVED these.

I will let you know if I come across any alternatives for flax seeds in raw breads. Ground chia seeds might be an easy option, and I will test some things out and let you know. I have heard of a raw apple bread that sounded awesome - I will report back if I can figure out a recipe for it. You can also use raw coconut flour (or regular coconut flour) to absorb water and give recipes bulk, and a bread like consistency. A little coconut flour goes a long way!

Love ice cream wink I make thick raw hazelnut milkshakes all the time in the Vita, and did made a super yummy walnut ice cream a while ago that I froze for a bit after blending. I agree a food processor is a very close 2nd. There are things I still find better to make in my food processor, like grinding nuts, making nut butters, making pesto, blending almond "not tuna" pate, etc. Here is a good "not tuna" pate recipe, just leave out sunflower seeds: http://nouveauraw.com/main-dishes/not-tuna-but-close/

*Note, you can always sub in macadmia nuts for cashews, as macamdami nuts are virutally no starch (or very low) - only prob is macadamia nuts are usually $$ Oh, and brazil nuts also work really well instead of cashews and they aren't as pricey.

Another great dehydrator recipe is raw coconut macaroons, here is a recipe, but they are pretty forgiving if you use coconut oil instead of coconut butter, or dates, honey etc instead of maple syrup, and you can just ground up some almonds to make the "almond flour": http://www.rawmazing.com/raw-macaroons-three-ways/
these are excellent snacks for taking on the road with you.

Oh, I agree on using sesame seeds too! They are loaded with calcium, and a great sub for other starchy seeds. I also LOVE sesame seed milk - just puree like 1/3 cup sesame seeds with water in the Vita and add in fruits, dates, or chocolate, etc.

Excalibur 9 tray as on the web it appears to be the best unfortunately its not cheap especially here in the UK we pay pounds for dollars. I have been trying stuff out to see if I like it in my oven which has a 40 degC setting but it only has slots for two shelves and it doesn't dry stuff properly. I have been wanting one for a while but not been able to justify the cost, then I realised they were going up /had gone up by £100 from £230 so decided I had better go for it.

My other justification is I can use the dehydrator for crafts too drying out Metal Clay for one.

Funnily enough I only discovered Kale chips a few weeks ago and they are delicious. We are actually just eating some now with our tea and the onion bread (not completely done but still yummy). I use coconut oil and have been cooking them at 180 degC for 10 to 15 mins as per the recipe I found. I shall definately try them in my dehydrator when it comes (a long list is being made smile)

Here is a link to a raw apple bread that doesn't use flax seeds, instead it uses chia. I just made a batch and have it dehydrating right now: http://bestrawrecipes.blogspot.com/2010/02/raw-apple-walnut-bread.html

I just used ALL apples instead of the added zucchini & carrot, cuz that sounded the best at the moment. I plan on making a raw almond butter & homemade blueberry jelly sandwich on this apple bread tomorrow, for a little picnic to take with us to the beach!

Also, on the same website, you will find a really awesome raw veggie based Pad Thai recipe. This is one of the dishes I plan to also see at our farmers market this summer.

I've had kale chips, too; they sell them at our Whole Foods. They're good!
I was wondering, how do you shell all your hazlenuts??!!! And do you remove the skins before making milk out of them? I remember that as being quite a task, but maybe it's not necessary.
I just figured out last night, BettyRawker is a play on Betty Crocker! smile A little slow! I like it!
You even make your own almond butter and blueberry jelly! You amaze me!

About what you said on another thread about miso, my sentiments exactly. But I was wondering if you have the same problem with tamari or shoyu. And actually, I was wondering if you've used nama shoyu, the raw stuff.

Hey Betsy,

In the fall the local farm I get the hazelnuts from has a big cracking machine. They will see you the hazelnuts for $1.75 per pound in the shell, and then run them through the big cracking machine for you free of charge. So it ends up being closer to $3.50 per pound for the nuts once the shells are removed. When I get them home I usually pick through them and crack any the machine missed and then freeze them, and pull them out as needed. They also sell walnuts the same way. I always feel like this big squirrel when I store all these nuts for the winter!

As for making hazelnut milk. I soak them for a few hours or overnight, which most say is not required, and then I use my hands to slide off the skins. I then toss them in the Vitamix with a ratio of 1 cup nuts to 4 cups water and blend. Then I strain them through a mesh "nut milk bag" and then dehydrate the leftover nut pulp to make a hazelnut flour for using in other recipes. If I am in a huge hurry, I don't bother soaking, I just blend and enjoy. The main reason I remove the skins is so the pulp isn't bitter. I like to add dates, vanilla and a pinch of sea salt to the hazelnut milk after it's been strained, or else the dates make it harder to strain. The BEST drink on earth is hazelnut milk with dates, raw cacao & ice mixed in!!!

And we have some huge blueberry bushes here at our house that put out around 150 pounds of blueberries each summer, so I freeze lots of those too. We have a freezer crammed full of stuff! My husband and I also usually pick 60+ pounds of cherries during the summer for around $1.50 per pound at a local orchard, and I come home and pit them with a little plastic pitting machine, and then freeze them too. I have found stocking up when things are in season works really well to save $$$. I am also experimenting with dehydrating some of the fruits we stock pile.

I actually don't seem to have any problems with tamari, which I like to use for soaking my walnuts in to give them a "meaty" flavor on dishes like raw fajitas But, I have also bought this coconut aminos "soy like" soy-free sauce, http://www.coconutsecret.com/aminos2.html which I use on days when I feel like my tummy is extra sensitve.

when i get a craving for "ice cream", a very good brand made with cashew milk. another very good brand made with "coconut milk". both very natural, very few added ingredients.

as for the dates, if no blood sugar issues, then not a problem, but for anyone with blood sugar issues (like i have), be careful, very sweet. i can't eat those bars that use dates as their sweetening base.

Andrea, that apron is just too cute! Do you have a dress or blouse with puffy sleeves that I think they used to wear?

It's funny, I don't seem to have problems with tamari, either, even though it's the liquid from making miso. I like the fajita recipe! I'm excited!

It's been two days now since I've had dairy or eggs, and I think I'm starting to feel the benefits. My tendons and joints are feeling much better. I am having a lot less anxiety, which is allowing me to rest and sleep better. On the down side, I am resting a LOT today. And I rested a LOT yesterday. When I feel so tired I get worried that I'll never have energy again. But I'll wait it out for sure. It might just take time for the dairy to get out of my body. I was totally sold on the "good" fats and vitamins from raw dairy being the answer to all my issues, but I now I'm not so sure. I think the fat was messing up my liver and kidneys.

That's great about having your own blueberry bushes! And wow, that's an amazing price for cherries. We pay an arm and a leg for cherries during a short cherry season, and then sometimes you can find frozen ones during the rest of the year. This past year I have only been able to find frozen ones for maybe two months. I heard that Michigan had a bad frost after their cherry trees blossomed and it ruined the season for them! For me, cherries are the best fresh fruit, dates being the best dried fruit, of course.

Thanks for your posts encouraging raw eating. I am hoping for a turn around on my health.

I hope you enjoy the rest!!! Just soak it up.

Whenever I do a detox and each time in the past I have dramatically changed my diet, I have always felt super tired the first few days. Last month when I did a 14 day juice fast, I bascially spent the first couple days moping around: making juice, napping, going pee, making more juice, napping, going pee... etc. For that fast, I finally let myself just take it super easy, and then a couple days into it I had an unlimited supply of energy.

Keep us posted on how you feel. I have learned one of the hardest things to do is let ourselves rest! Pamper yourself, hot epsom salt baths, lots of water, warm tea, smoothies, comfy bed, good book wink
