Hi All,
Curious to know what your best tolerated carbs are.
I was trying to add in sticky rice and some fruit sources of carbs but it seemed to aggravate or create either a bacterial or candida infection (gradually felt worse, got rashes, biofilm on tongue) so now I'm basically ketogenic again and back on some herbal antimicrobials and trying to gradually increase my probiotic intake. Looking ahead though, I'd like to try to gradually introduce some carbs back in at some point and I'd like to start with the easiest to tolerate. Thinking about blueberries but cautious about the sugar. Wondering if cooked carrots are too starchy for many. Any carb sources people find easy to tolerate?

Trying sticky rice, aka glutinous rice, sent me into one of the worst flares of my life last year. And I eventually found myself underground for 2 weeks in a radon mine in Montana trying to break out of it! So no sticky rice for me. I seemed to tolerate it for a couple weeks, them BAM my it was like someone lit my rib cage on fire, I had trouble walking, participating in daily life, even trying to sleep was miserable, and I was in a LOT of pain.
I have also seen folks over the years try sticky rice and initially tolerate it okay but then later add that they get hit with a return of candida overgrowth symptoms like you described. But then again, some seem to tolerate rice just fine.
As for carbs I do excellent with low starch fruits, honey, maple syrup, coconut. So I eat dates, figs, blueberries, blackberries, watermelon, ripe peaches, grapes, strawberries, etc all the time. If I want to increase calories I then add honey to my tea and drink apple juice (those things can really help pack on extra pounds).
Cooked carrots are also way too starchy for me. I pretty much avoid carrots these days. I occasionally have a glass of raw fresh pressed carrot juice, but cut back on that too for the most part.
Last year I worked a desk job doing a contract accounting job for a while, and I found myself drinking honey sweetened hibiscus tea all day. So this packed on a few extra pounds before I realized it. I then figured I would try a keto low starch diet for a few months. This was also not a good experience in the end. I learned that I need a good source of carbs to function, keep my energy up, my skin looking healthy, my sleep sound, and my hormones in check. Some people report feeling better in ketosis, but I am not one of those people. I still enjoy high fat, low carb meals, but I don't go for extended periods of time without some source of carbohydrates.
I hope you find some carbs that work well with your body! I think juices (100% pure apple, pineapple, grape juice) on an empty stomach can be a good place to start, as they are easily digested. Or you can make jello with grape juice and gelatin for extra carbs + gut healing snack. Or make a nice paleo panna cotta with coconut milk, gelatin, honey.

I have been meaning to do a blog post on my montana mines trips! I took so many great photos and I had a really awesome adventure in going there, truly awesome. I actually went twice last year for a total 4 weeks, 2 trips, as I wanted to give it the benefit of the doubt. On the 2nd trip I outlined and began editing my AS cookbook, so it was more like a working vacation siting in the mine with Wifi. I fell in love with Montana, and it was the perfect rest and relaxation trip for me. I also fasted on raw foods and fresh juice most of the time, which always helps me too. So yes, I felt better while there, I got out of that flare, but I did not get to experience the mine miracles so many others have talked about and even experienced right in front of me while I was there. Instead I thrived on going swimming in the hot springs in the mornings, picking wild berries, exploring ghost towns, picnicking in the botanical gardens, getting Rolfing treatments, and visiting Helena, Missoula, Bozeman and small towns in-between mine treatments each day. The 11 night mine package is super affordable and leaves lots of open time for sightseeing, as you have 24 hour access to the mine and are only supposed to be in them a 3 to 6 hours per day, in spurts. Though I did quite a few 8 hr days in total, getting the most hours in at night relaxing in the mine room, editing my book and watching Netflix movies on my tablet. Blog post to come, for sure! Here are the AS testimonials that inspiried me to go (I corresponded with some of these folks before I went too), as well as seeing it talked about on kickas, (search thru the old forums) http://www.radonmine.com/clients.phpIf you are going to go I say go for the whole vacation experience of it, as I just love off the beaten path places. And it's a great place to truly decompress. At the Free Enterprise Mine they have nice apartment rooms with kitchenettes so you can do your own cooking and juicing too. I did not experience any lasting radon effects that made my body more resistant to starch, soy, dairy, refined sugar, and stress, which I was just as sensitive to after the mines as before. And for my body, as long as I stay away from those offenders, the AS activity mostly stays away.

I am so glad you are enjoying the cookbook!! I really wanted to create a cookbook to try and make the diet a lot easier (and tastier!) for everyone to get started on. Hoping folks would get off to a good start, and get great results much faster. And actually make it enjoyable, rather than a struggle.
