Celery root is my favourite mashed potato replacement. You can serve it as a side, but I think it works best with other flavours, like served under a pile of stew. It is really great as a topping for shepherd's pie.

According to the USDA, it contains .89g starch per 100g of cooked. That's why I listed this recipe as LSD. However, the raw veg always tests well with iodine - a very slight darkening but nothing like carrots, which always turn solid purple on me. So if you can tolerate carrots this will probably be fine.

Makes 4 servings

Ingredients

1 large celery root
salt

Instructions

1. Use a sharp knife to cut off the tangled mass of roots at the bottom. Peel.

2. Chop into 1 inch cubes.

3. Add cubes to a medium or large pot. Top with water. Add some salt. Cover.

4. Bring to a boil, reduce to medium, and cook for 20 minutes or until tender.

5. Drain well. Return to pot and place pot uncovered on still hot burner for 30 seconds while stirring occasionally. This will help dry the celery root a bit more.

6. Mash or puree with a hand blender. Season to taste.
