Hi Sara

I love casseroles, but they can get a bit boring - try cooking in a little white wine with mustard and cream to add a little twist.

Mustard Chicken Casserole

INGREDIENTS
Chicken pieces eg drumsticks, thighs, legs
1 onion, roughly chopped
2 cloves garlic, roughly chopped
Vegetables, sliced or chopped, eg. leeks, cabbage, carrots, celery, mushrooms
900ml (approx.) liquid, eg. white wine, stock, water or combination
Seasoning, eg. salt, pepper, herbs (I like a sprig of rosemary out of the garden)
1 or 2 heaped tsps (to taste) grain mustard (or your favorite)
Big slosh of pouring cream (you could also use plain yoghurt or creme fraiche)

METHOD
I heat a little olive oil and brown off chicken on a high heat in a casserole, drain and put to oneside.
Roughly chop onion and garlic and soften in pan with chicken juices.
Add to this any vegetables you like and fry this lightly for a minute or so.
Add everything back into the casserole with the vegetables.
Add enough liquid to cover.
Season with salt, pepper, herbs etc and bring to the boil.
Put in oven at 180 C for about 1 hour until chicken is cooked (or coming away easily from the bone).
Put on hob and stir in some grain mustard (or any mustard) and some light cream. Reduce sauce a little if you need to.

I would serve this with rice and maybe some peas for the family and extra vegetables for me, eg. wilted spinach.

Ok here's another recipe:

Smoked Mackrel with tomato sauce

Wrap some smoked mackrel fillets in foil with a knob of butter and bake in oven for about 20minutes at 180 C, while you make the tomato sauce.

To make tomato sauce:
Put 4 - 6 tomatos in dish with boiling water to remove skins.
Gently fry a crushed clove of garlic in oil for about 30 seconds, then add peeled and chopped tomatos, 2 tsp balsamic vinegar and 1-2 tsp sugar (depending on how sweet your tomatos are). Season with salt and pepper. Cover and simmer for about 10 minutes.
Take off heat and stir in 1 tablespoon basil and 2 tablespoons parmasan cheese.
The sauce should be quite thick, so reduce if necessary.

To serve:
I usually make either creamed potato or new potatos for the family and extra veg for me.

Spoon some sauce into the centre of the plate and place fish on top. Arrange green vegetables eg, asparagus or broccoli around the fish and scatter the potatos around in the same way. If using creamed potato, I would put that in the centre of the plate and put fish on top and serve tomato sauce in little mounds around the plate.

This recipe is a huge hit in my house and comes from Lucy's Kitchen (not transcribed exactly).

Cinnamon Gardens Chicken Curry

Ingredients:

2 cups red onion (diced small)
2 lbs chicken (either breast chopped into 1 inch cubes or whole thighs bone in, although it makes it harder to eat it has more flavor)
2 tablespoon minced garlic
2 tablespoon minced ginger
1 tablespoon curry paste or powder
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cinnamon
1/2 teaspoon cayenne pepper
500 ml diced canned tomatoes
250 ml coconut milk
1/2 cup raisins
1 1/2 cup spinach
1 lemon halved

Saute onions for 10 minutes over medium heat in a pot or deep dish pan. Add garlic and onion and cook for another 5. Add all the spices. Add chicked and sear. Remove chicken (to keep it juicy). Add coconut milk and tomatoes and scrape up any bits of onion or chicken off bottom of pot. Bring to boil and simmer for 5 or 10 minutes. Add back chicken and cook for 10 minutes (longer for bone in thighs). Add spinach and raisins and cook for 5 minutes. Squeeze lemon juice over top and dig in!

This recipe is wicked and will make your husband very happy wink

I also sometimes add other stuff like broccoli or use the whole can of tomatoes (798 ml) and coconut milk (398 ml) to make it easier and to make more delicious curry "broth".

Oh yummy yummy yummy. Those all sound so good!! I will be trying them ALL.

I have not cut out dairy unless I know it is starchy. So most cheeses I still use.
