If the coconut flour passes the iodine test and my very starch sensitive hubby can eat it then I say it's "starch free" grin

I've only heard of a handful of people that cant handle it and these are people who seem to have a lot of other issues going on eg having to go to extremes with diet much more than just NSD no sugar, fruit etc etc. Some suspected it may be the natural sugar content of the coconut flour that caused them the trouble.

amarettis, italian almond cookies, are a nice treat.
almond flour, egg whites, sugar, almond extract, vanilla extract.
very easy to make as well.
you can google to find a recipe on the internet.
they come out perfectly every time.
i don't eat them too often due to the sugar, but they are my "no starch" christmas "cookie".

Hi Philsta,

I am guessing that you've got your heat too high in both your stove top and your oven. Try lower heat. What kind of pan do you cook your pancakes in? I got a nice no-stick kind and then making pancakes became very easy, after lots of failed pancakes in my past.

There are good almond flour recipes at elanaspantry.com

Good luck and try not to get too frustrated. If you become like an artist/scientist in the kitchen then you will develop a sense for temperature and timing with your recipes. Let us know how it goes, and let us know if you end up using coconut flour and liking it better. If you don't like the egg yolks maybe you can just use egg whites?
