I agree that it's hard to tell what will happen with dietary changes on any specific individual, but there's a way to find out! Go ahead and get your blood work done, and if it raised it you can talk to your doctor about dietary changes to help address it.

I went very low starch with my daughter, who has AS, last Easter. My cholesterol was slightly on the high side the previous two years for my physical, and this year was back in the normal range, after eating low starch for 9 months.

I buy our meat and eggs from the store. We did go lactose free, and switched all our cooking/baking oil consumption over to coconut oil. I also make our mayo out of olive oil now, rather than buy the stuff from the store (because we eat a LOT of mayo! And bacon). Other than that, I personally eat a lot more meat and fat than I did before, but it's much more balanced out with fresh veggies and fruits, and I intentionally try to get my "healthy" fats from nuts, avocados, and olive oil.
