Has anybody else had any similar experience, or is there something different to almond flour which works better? Maybe I should try a cheesecake instead.

Cheesecake is a great option! I have made quite a few variations on a "cheesecake slice", as I don't think you could form sides well with almond meal mix, but then again - ther's another experiment for me...

I have made a lemon meringue slice, (
