I am COOCOO for Coconut Milk! I love it and drink it all the time.

Here are 3 different ways to make a starch free batch of coconut milk:

1. Puree 1 cup organic dried unsweetened shredded coconut with 4 cups water in a vitamix or blender. Strain through a nut milk bag (basically just a nylon bag) and drink the milk, use it in soups, and then dehydrate the left over "pulp grinds" left in the bag and make coconut flour. This makes my most favorite kind of coconut flour, which I perfer much more than the store bought stuff.

2. Take a couple tablespoons of " coconut butter " and puree/blend with water. You now have coconut milk. Also, you could easily just take a tablespoon of coconut butter right out of the jar and stir it in your coffee.

3. Wack open a young Thai Coconut, pour the coconut water into a blender, scrape out the insides of the coconut meat (comes out very easy in Young coconuts which are still white with a husk and sold in the refridgerator section) puree together for 100% pure "real" coconut milk.

Options 1, 2 & 3 are all compliant with SCD & NSD.

I also like the Organic one by Thai Kitchen (but it does have a little guar gum, not allowed on SCD) but I use it in things when I am feeling lazy. Also this particular brand, the top 2/3 of the can is always a huge layer of thick cream that makes AMAZING whipped cream when mixed with honey! LOVE it!!

Also, I ended up giving up coffee last year :(, I noticed it always lead to cramps in my gut and more inflammation in my body, but I am now a big fan of Dandy Blend coffee substitute. I love this stuff, and it passed the iodine test, and its supposed to be great for the body & liver, as dandelion is a great body cleanser, though I think juicing dandelion roots is the most effective way, I still enjoy drinking Dandy Blend lattes with coconut milk or homemade hazelnut milk.

So glad to hear you are embarking on this diet. I LOVE it!
