I have a questions about a couple of things and thought it would be best to just put them in one post. Any help at all appreciated.

1) I read where almonds have made some people react with flare-ups. I buy and eat alot of raw, whole almonds and wonder if they are something I need to be taking precaution with?

2) Is black coffee (no creamer or sugar) NSD safe?

3) I've read that citrus fruits and juices can be dangerous. Can anyone clarify that for me?

1 - The almond SKIN has enough starch to cause an AS flare. You can remove the skin by blanching the almonds in boiling water for 30 seconds, then rinse and peel.

Nuts in general go rancid quick, so its best to buy them fresh when harvested and then freeze them. I still can only eat in moderation, as they cause a Candida (fungal overgrowth) flare, which can result in arthritis like symptoms in my neck, shoulders and upper back mostly, among other things. It also helps to soak them overnight in salted water, then triple rinse and dry them in a 150 degree oven for 10 hours. It removes toxins/impurities.

2 - Coffee has NO starch and will NOT cause and AS flare.

I however don't drink caffeine due to my Candida. It kills beneficial bacteria, which I have a hard enough time keeping in balance.

3 - The white pith in citrus has starch and will cause a flare, even when fresh squeezed into juice. I can drink one glass of OJ, but if continued daily, on the second or third day I will go into an AS flare. I find this with many foods that have trace amounts of starch, I can tolerate in small amounts, but if consumed on a daily basis, it builds up in my system.

Keep a food journal and you can figure out your own tolerance levels. Its best to go strict in the beginning, then when you are pain free, you can start reintroducing foods slowly, one at a time, and see what happens.

I ditto Jeanne's observations. Citrus once in a while, limited nuts...I do have one cup of java in the morning with DLPA. Didn't know coffee killed beneficial bacteria. Wonder if it kills the bad bacteria as well...?

This "bacteria farming" is so weird -- raising crops you cannot even see. Who knows what is really going on in there.

1. blanched almonds are no problem for me. Sometimes I do react to the skins, but only if I have not eaten whole almonds for a few weeks. Takes me just a few days to get used to the skins again though

2. Coffee. Yeah, no iodine reaction, however Coffee is a bean. Seems that the roasting process destroys the starch. It is also a stimulant and thus I can find it dampens the immune system a bit (more susceptible to flu, less pain fore a few hours). I used to feel better for a few hours after coffee and then I would rebound with more pain. These days I don't rebound like that, but I do get run down if I use it too often.

3. Citrus. Oranges are an unusual problem for me. They seemed OK after cooking them in a compote - from memory (I used to do that often, but now it has been quite a while). Lemons I have not had any problems with. Nor limes. However.. we dont use much lemon or lime.. so maybe that is why I don't note any reaction
