so after reading Sinclair's book, i want to try to add some bacon and chocolate to my diet in moderation. but every bacon i can find is cured with nitrites. no listing of starch, but aren't we supposed to avoid BHT and the nitrites and all? is there a brand of bacon anyone knows that could be safe?
i'm having the same problems with chocolate. i've been looking for good quality dark and semi sweet...but they all seem to include soy lecithin. so i've held off so far. is it fairly safe to eat? is there a NSD safe brand i should look for?
the good news is i tried some breyers all natural ice cream this weekend and had no reaction to it. at least i know i can handle it occasionally.

Hey Josh, Hormel has a line called Natural Choice, the bacon has no added nitrates but there's naturally occurring ones from seasoning like celery. Oscar Meyer also had an all natural brand but haven't seen it around lately. Applegate Farms is another, but harder to find. Just picked up a chocolate bar in Krogers Natural Food Section: Green & Black's Organic Dark 85% - no soy lecithin I was pretty excited to read. It's expensive though. I've wondered about the soy lecithin and if choc. not so good for NSD, I've still been eating it though - can't quite get away from it.(i'm not pain free, so I've been "planning" to cut choc. and dairy.)
Since you can handle dairy ice cream, Wanted to remind you to be picky, but i'm sure you know - was reading a label in our freezer and besides the stuff i couldn't pronounce it had wheat and soy flour in it. But a taste of some good stuff sure helps get thru the NSD thing. good luck, mc

we eat an applewood bacon that is not cured, no nitrates.... don't know if all applewood bacons are the same, but look for it and see..... the brand we eat is the grocery store's brand, so wouldn't be very helpful to you.

What exactly is soy lecithin and why is it bad? Both are tasty. But yes, expensive! Why is it the less crap thats in it, the more you pay? haahah

Hi Jon eats bacon with nitrites. Just doesn't eat loads and loads of it. Soy lechithin is fine on NSD Chelsea

Dow's Amazing Chocolate/Bacon Recipe:
1. Take one bar Hershey's chocolate bar
2. Melt in microwave.
3. Add bacon.
4. Yum!
(no wonder I don't feel so great)

Good to know about soy lecithin- i wasn't sure since soy products other than tofu starchy, i was just hopin' the amount would be not enough to cause problems. As a family, we've just avoided nitrites since havin' kids because of all the bad press. Kiwi- i've read some on NSD don't eat chocolate - can it help results with NSD or are they doin' it for other reasons, like allergy or candida? thanks, mary cay

Hi mary cay Well, I guess cocoa beans would be starchy as would be cocoa powder so that's a good reason not to go too crazy on chocolate altho most seem to be able to get away with it in moderation. Many do exclude it due to the sugar content - trying to avoid candida etc. @ Dow... you are crazy!  Chelsea

dow, you're not alone in your chocolate - bacon "craziness"....... ever since we saw chocolate paired with bacon on iron chef, we were like "i've got to have me some of that!" i thought that's what this post was about when i opened it up. at christmas time i found a brand of "gourmet chocolate", vosges. most of the combos involved chilis and chocolate, but they had this one bar that contains applewood bacon, alderwood smoked salt, and deep milk chocolate! it is surprisingly (or maybe not so surprisingly) delicious!  sue
