Hi All,
I ordered Carol Sinclaire's book, and I can't wait for it to come in the mail. I cut out breads already and now I am hitting a steep learning curve trying to learn to cook without starch. I have a favorite receipe for cauliflower and it contains boiled cauliflower, dried dill weed, salt, garlic, and sour creme. Does it stay or go? Also does anyone know how to interpret the numbers attached to the different foods on the starch list(like oats is 51 and porridge is only 9)?

HI Nette,

Cauliflower is one of those foods that *should* be safe - but there are those here on the NSD who find that it can at times contain small amounts of starch. Whether it is enough to flare you is a very individual thing ! (I, for one, will be having cauli tonight when my family have rice...) smile

I think you need to decide if you are gonna be the Starch Nazi and exclude even minute traces of starch,(BTDT - better results but HARD in a social and family environment long term, IMHO) or whether you will be *almost* NSD (best compromise for me...)or LSD (tried that - honeymoon period, then crashed and burned!)...

The only way to tell for sure is to have your trusty bottle of iodine to drop onto the cauli - and do it on both the stem and the floret - more likely to test +ve when cooked.... now you can start to see the dilemma!

The 'starch list' of foods is a *rough guide* and should not be taken as the gospel. It depends a bit on season, location and a whole host of other things!

The numbers will refer to % of total weight - oats are oats, but porridge is water, milk and oats, so the % starch is lower as there is all that liquid in there as well.

I for one would not be having *ANY* grain based product - wheat, rice, corn, oats, barley etc. Also avoid root veges, peas and beans (of the seed variety - like lima beans, navy beans etc), pulses, some nuts and bananas. IOW - the *obvious* sources of starch...

There are other fruits and veges that contain traces of starch - some enough to strike fear into the hearts of really strict NSDers, who will be ultra sensitive to traces! eek

Of course, some folks also have an issue with dairy (the lactose) so they would say "beware of the sour cream", as well as non fermented yoghurt, milk and soft cheeses. Hard cheeses and well-fermented yoghurt should contain quite low levels of lactose.

Good luck - maybe try *almost* NSD for a start and when you are going reasonably, you might need to ask for further advice or read through some of the conversations in the archives to see some of the traps that so many of us have fallen into - quite individual, as you will discover...

It aint' easy but it IS worth the effort!

Thank you for replying. I am hoping I am the "mostly NS dieter" because it does sound hard to avoid it all the time. I had a bad flare up when I signed up this week and I sent away for the book and cut out bread right away. Last night I could sleep on my side, which is big for me, and instead of grasping for the wall I swung my legs out and stood up this morning....you know like normal people. AS is a funny desease(not ha ha funny), you never know if your pain is related to something you did like a roller coaster ride, something you ate, or stress(or something that's not even on your radar screen). I will have to invest in some iodine, it's time to be weird in public again ha ha.

So exciting to see some good results and get out of bed normal already!! Yay!

I ate a load of cooked cauli and it hurt me pretty good, but raw is always ok for me. Everyone is different. Try it out, let us know.

Hi Nette,

I have noticed over the last 3 years of doing the NSD that I have become more sensitive to certain foods. In the beginning I had so much pain relief from just cutting out the obvious starches (bread, grains, rice, potato) but as the years have gone on I am more sensitive to things like cooked califlower, almonds, sugar, dairy....things I wouldnt bother me at all in the beginning. Some days I wonder what is left for me to eat besides cardboard. haha...wait cardboard might have starch. ;-)

desgirl, that is interesting as I find I suffer from a similar phenomenon. Any time I try to add something back into my diet, I find I have some sort of reaction. This is mainly prominent with sugar (natural things like honey or fruit). All this despite avoidance and being on anti-fungals for plenty long. Starch has been very low as my diet has consisted basically of meat, safe veggies, safe nuts and seeds, and oils. Now I'm soon to turn things upside down a bit and avoid fat (adding in things like beans and maybe rice to compensate for missing meat) for a period of time in an effort to get the upper hand on biofilms and make my antibiotics more effective. Somehow I wonder if something else isn't going on though. I'd sure like to know.

Hi Nette,
Glad to hear you're starting on the LSD/NSD and I'll keep my fingers crossed that you'll get some relief.

I'm one of those "Starch Nazis" Louise mentions above smile
and didn't seem to find much relief until I really went completely NSD. LSD just didn't do it for me.

It has difficult at the beginning to eat this way when the rest of your family is having all those old starchy comfort foods, but it gets easier. My wife and I eat almost the same exact food now that she has gone to a totally Paleo Diet and it makes things much easier.

Good luck to you! Stick w/the diet and come back with questions or troubleshooting issues as there are lots of folks here with many years of dieting under their belts. No pun intended. crazy

not sure if you've discussed this before, sorry my fault for having such a faulty memory, but have you had a food sensitivity / allergy testing done? i think it was IgA or IgG tests that i had done. showed that i should stay away from eggs (a little) and dairy (a lot), so that has been my new thing. and i'd never have known, they don't make me feel sick in any obvious ways when i eat them, especially the eggs. in fact i feel really good after eating eggs. and dairly, too much bothers my stomach, flares my gastritis, but that is all i outwardly notice. but assuming they cause inflammation even if i didn't know it before. so thinking food allergen testing a good way to help weed out the stealthy culprits. also my stool sample testing ruled out candida so that's at least one less thing to worry about, or so i think, i'm sure others will tell me if i'm wrong! as a scientist, guess i just like measurable things.

Yep. Imunmnolab. Nothing remarkable. Everything (and there was only like six or eight) was minor. My current doctor didn't think much of the results. Doesn't mean they don't matter, but nothing jumped out as overly problematic.

Hahaha, thats a classic. floor I've got about 15 months of NSD/LSD under my belt, but still got the left overs from the previous 10 or 20 years of high starch diet sitting on top of the belt. It is shrinking and im looking forward to the day its all back under the belt. (couple more years i hope)
