Hi all, I am just getting started on NSD..any suggestions for coffee "creamer?" I usually use soy milk but Silk fails the iodine test and it looks like most of those products have things like carageenan and are package in paper cartons anyway. I really need the coffee to get me to work in the morning!

I don't have the Sinclair book on hand although I studied it a few years ago then passed it on. I just read about SCD which has some similarities.

Hi Jansen,

I am COOCOO for Coconut Milk! I love it and drink it all the time.

Here are 3 different ways to make a starch free batch of coconut milk:

1. Puree 1 cup organic dried unsweetened shredded coconut with 4 cups water in a vitamix or blender. Strain through a nut milk bag (basically just a nylon bag) and drink the milk, use it in soups, and then dehydrate the left over "pulp grinds" left in the bag and make coconut flour. This makes my most favorite kind of coconut flour, which I perfer much more than the store bought stuff.

2. Take a couple tablespoons of " coconut butter " and puree/blend with water. You now have coconut milk. Also, you could easily just take a tablespoon of coconut butter right out of the jar and stir it in your coffee.

3. Wack open a young Thai Coconut, pour the coconut water into a blender, scrape out the insides of the coconut meat (comes out very easy in Young coconuts which are still white with a husk and sold in the refridgerator section) puree together for 100% pure "real" coconut milk.

Options 1, 2 & 3 are all compliant with SCD & NSD.

I also like the Organic one by Thai Kitchen (but it does have a little guar gum, not allowed on SCD) but I use it in things when I am feeling lazy. Also this particular brand, the top 2/3 of the can is always a huge layer of thick cream that makes AMAZING whipped cream when mixed with honey! LOVE it!!

Also, I ended up giving up coffee last year :(, I noticed it always lead to cramps in my gut and more inflammation in my body, but I am now a big fan of Dandy Blend coffee substitute. I love this stuff, and it passed the iodine test, and its supposed to be great for the body & liver, as dandelion is a great body cleanser, though I think juicing dandelion roots is the most effective way, I still enjoy drinking Dandy Blend lattes with coconut milk or homemade hazelnut milk.

So glad to hear you are embarking on this diet. I LOVE it!

I was going to say "try coconut milk" so I will just tack a bit onto Andrea's great suggestions:

Pour very hot or boiling water over the shredded coconut and let it sit until it is room temperature - that way you extract more of the volatile coconut oils from the mix and that seems to give you better 'dried leftovers' to grind, too. (you also don't burn yourself by having the top blow off the blender when you whizz it up! - No, I have not found this out the hard way blush... just trying to prevent anybody else from doing it! )

Either way - yum yum!

Thanks so much, guys! I'll probably experiment with all of the above. The Vitamix is the best ever. One day I'll get around to giving up coffee..I drink dandelion tea on occasion in the winter so I'll have to try Dandy Blend.

Andrea, I love your website! What a great place to help keep me going.

Adding coconut cream to cocoa is fine with me.

In most cases coconut cream is perfectly safe for me, but for some reason not so good with coffee frown

I tried adding coconut cream to my coffee a couple of times and it made me feel ill. I think it is most likely something peculiar to me, but thought I better let people know to watch out for it. I easily get dysbiosis, and this is one example of that.

Also, in the past I found that black coffee would reduce my AS symptoms, only to have them rebound even worse later. That is not an issue these days.

For some odd reasons EVERY single time I have coffee my prostate acts up. Not sure why, but maybe due to changes in pH..

Hi Jansen,

Most healthfood stores seem to have coconut butter. I really like the Artisana Brand. I have a huge 2 gallon bucket of Artisana Brand Coconut Butter in our pantry, if you want me to send you a sample, just say the word! I often mix it with cacao (raw cocoa), medjool dates, & ice in the Vitamix for a smoothie/milk shake.

Also, it seems like Coconut Cream and Coconut Butter are pretty much the same thing, just depends on who is marketing it.

I just love black coffee so am lucky but was always pleasantly surprised that most people who i could not supply with dairy whitened coffee liked the coconut one. I use purest cream possibly and water it myself as i'm not fond of those gums and thickeners.

Thanks for all the tips! Andrea, I was using soy milk for a similar smoothie so glad to have the coconut idea. Guess it will be a Whole Foods jaunt on the weekend..

@Andrea, I was visiting here this morning with the idea of telling you about Dandy Blend and saying that it would make a good coconut/coffee ice cream. But you already know about Dandy Blend! I think Dandy Blend tastes better than coffee, but I wasn't addicted to coffee, which I know can make a difference.

I have tried coconut milk in coffee and didn't like it, but for some reason it tastes good in Dandy Blend. I bought a case of coconut milk from Wilderness Family naturals. It's good, but it does have some xanthan gum in it. Maybe when I get myself together a little I'll start making it myself from coconut butter. Artisana is a good brand.
