I just made these the first time today, and I'm already planning my next set of modifications to try! They passed the non-LSD eater's test (my husband said "those are pretty good!") and the iodine test:

1/2 c butter (am going to try coconut oil next time)
3/4 c sugar (going to try coconut sugar next time)
2 eggs
1 c nut butter (I made my own, and used 1/2 c almond and 1/2 c macadamia nut for that peanut-buttery flavor)
1/2 c coconut flour
1/2 t. salt
1/2 t. homemade baking powder
1/2 c. jam (I used strawberry)
1/2 c fresh fruit (I used raspberries)

Cream butter, sugar, eggs, then add nut butter and mix well. In a separate bowl, mix the coconut flour, salt and baking powder. Add to the creamed mixture, and mix until thoroughly combined. Spread 1/2 the mixture into an 8x8 baking pan lined with parchment paper, lightly greased. Spread jam and fruit over the top, then cover with the remaining batter. Bake at 350 for 35-40 minutes. Top will be a medium brown color and fairly firm (I pulled mine out at 35 and it looked "jiggly", so I put it back in for 10 more minutes)

These aren't quite firm enough for me to call them a cookie bar, but they have a nice nutty flavor, and the coconut flour isn't at all gritty or dry. I missed pb&j!

These sound awesome! I have so many lovely frozen fruits I could try them with, thinking raspberries would be awesome!


I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. Ohhhhhh Low Starch Diet...... Thought these cakes where the wacky kind with the other "LSD" in them...... smile

Oh well.... Thought we were going all yellow submarine there for a minute.

Now that would have made a very interesting pb&j. Unfortunately, I was just so excited by the fact that after 9 months, I finally figured out I could make nut butter that it never even occurred to me. Eating food that tastes like peanut butter was magical enough!
