Hi everyone. I love coconut, and since it seems to be a major player in the no starch diet, I'd really like some recipe ideas. Crustless coconut pie/custard? Coconut muffins? I appreciate any/all guidance or pointers to where to find recipes. So far I've been on meats and a few veggies, but I'd like to add some dessert or other tasty items back into my life and I think coconut may be the answer! Thanks!

Hi Barbara,

These coconut muffins are a favorite with a lot of NSD'ers I know. They are nut free with a coconut flour and egg base. They are actually pretty good, and I am not a fan of things with eggs usually.

I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. Thanks so much. Great resources. LOTS of options. I like the suggestions on that site for other uses too... interesting, especially the mouth rinsing with coconut oil. I tried the face cleansing with it and adding some to a hot bath and loved those uses! However, I don't think I'll be trying coconut oil as deodorant! Oily underarms? Oily clothes? Maybe not but it sure seems like it would be icky.

On the Choc chip cookie recipe, coconut flour is not listed in the ingredients but if you read through the comments people added it in and they came out great. I have made all these recipes and have enjoyed them.

Barbara, I have also made a standard recipe coconut macaroon, and then dip them in dark chocolate (bottoms only) with coconut oil. They are great, even without the chocolate!

And this spring, I'm going to give a shot at a crustless rhubarb/coconut custard pie. I had one many years ago made by our local Amish population, and it was a wonderful combination. Just waiting for my rhubarb to come up, so I can iodine test it.

Karen, yum! I'll definitely do the macaroon with dark chocolate. I made a crustless coconut pie the other day and it came out almost cake like, which was actually wonderful. I sure hope I don't have a coconut sensitivity....I should know soon! I also made a smoothie of coconut, pineapple, small hunk of very ripe banana and spinach and it was excellent, but probably too much fruit at once. I had a headache and neck pain almost immediately after which escalated throughout the remainder of the day and evening. I suspect it was the sugar load from the smoothie.

I would actually suspect the banana. I can't tolerate even the ripest bananas, as much as I wish I could. And I don't know many on this diet who consider them safe frown


And one other thing that you may or may not find useful: I never mix coconut milk and fruit in smoothies, doesn't work in food combining for me, gives me a stomachache right away. I call it a fat and sugar bomb as it is ingested so quickly. BUT, that is also just MY body! You might be totally different.

I like fresh nut milks and fruits, also coconut water and fruits. And I do make coconut ice cream with some fruit, but it is eaten much slower (and in much smaller portions than a smoothie). I made a vow with myself to never drink another coconut milk based smoothie with fruits. Again, this is what works for me. Others out there say the opposite!!

I also live on smoothies, and usually replace 2 meals a day with smoothies. I just no longer make them with fatty coconut milk. Some of my favorite smoothies:

Homemade almond milk, strawberries, dried apricots
Homemade walnut milk, pear, rosemary, cinnamon
Coconut water, pineapple, basil
Homemade walnut milk, cacao, dates, baby spinach
Homemade almond milk, matcha green tea powder, mint, figs

Andrea, I did the same smoothie again without banana, and no problems, so I think you were right. I'm amazed because in the first one I used such a small hunk of banana and it was very very ripe. I'm learning! Thanks for the additional smoothie ideas. I don't know if I'm up to making my own nut milks yet, hmmm, but I'll explore it. Is it okay to use store bought instead?
