When I make vege soup, it is 'thick' with veggies and I have found that lots of cauliflower thickens things up, you can even steam it separately, mash and add it in. A friend of mine uses cauliflower as she would mashed potatoes.

Also if you leave the lid off of the soup pot it tends to boil down and thicken up, as well as cooking for more than one day ie Day Old Soup, the second and third day is always much better. Yummo, I love veggie soup two days old......I put a big pinch of curry powder in as well, (if you can handle it)
