Last night I made lazagne for the family but I made a starch free one for myself at the same time.
I made individual ones actually; 3 little ramekins for my 3 little girls and two adult size portions.
I layered up meatsauce (I used fresh tomatos not tinned and red wine and stock - I reduced the water content by simmering without a lid on the pan when the sauce was cooked through). If you don't have a good meatsauce recipe, I will give you mine.
Next I put fresh pasta for the others and a layer of fresh spinach leaves for me.
Next layer was cheese sauce, but for mine I made a sauce from Carol Sinclairs book using cream and ground almonds. Let me know if you would like me to type this out for you!
Then just repeat the layers finishing with cheese sauce and freshly grated parmasan cheese!
It was delicious, really satisfying!! And if you make a large batch it is totally freezable! So your hard work will not have to be repeated too often!!
Will try to think of some other things for you. Do you have any favourite ingredients? Meat or Vegetables?
My real passion is baking over everything, though - I just love making cakes!
