Hi everyone. I'm somewhat new to this forum and working my way through my own customized diet journey for AS and SIBO. I see such conflicting information about whether vegetables are more starchy raw or cooked. In the IBS book Fast Tract Digestion by Norman Robillard, he says cooking vegetables makes them less starchy and therefore to eat them cooked and while hot. He also advises that cooked vegetables, rice, pasta, etc become starchy again when cooled, so never eat cold leftover rice or veggies unless you thoroughly reheat. Then on this forum I see posts saying that cooking vegetables releases starch making them MORE starchy, so eat raw. Well if cooking releases the starch, doesn't that mean it removes starch? This should not be an opinion question. There should be a factual answer to this. Pease advise! I'm especially hoping to hear from John on this, as well as anyone else who can clarify. Thanks!
