Frying makes little envelopes of food sealed with coagulated oil and caramel-like heat altered food. Inside these envelopes (packages) can be various foods including lots of carbohydrates and these will pass through the stomach undigested to the intestines. gradually the covering will be softened and removed to expose the interior which will then be available as food to one of the bacteria most likely to cause most of our problems - Klebsiella pneumonii (Kp for short). This is the bug that we try to reduce or eliminate by going on a starch-free diet! The arch enemy.........
So frying can work against us.
That's the fry theory as i see it, so i try to steam rather than fry, but love some of that taste so throw in the Olive oil and saute a bit first.
