I have given this a lot of thought.
I have been so lucky lately with my trip to Europe and have seen some of the most beautiful scenery in the world. I plan to see much more in the coming years.Any of the days spent on these trips would be near to perfect.
On one of my visits back to England I would like to go back to Scotland and I think that a perfect day for me would be spent somewhere in the " Highlands " When I am there, my whole being feels completely different. The last time I was in Scotland, I went only as far as Loch Lomond but as I was approaching it, I could feel that different feeling washing over me. So I would have to say that a perfect day would be spent outdoors in the "Highlands " of Scotland, surrounded by the misty, heather covered mountains. I would not be alone. I would be in the company of my children, husband, brothers and their families - and - My Mother and Father. Both my parents have passed away but a perect day would be to have them with us again. We would all spend the day together, filled again with all the fun and laughter that we used to share.

I've been geting into Supertramp again recently. One of these days I should "Take a jumbo, cross the water" and have that "Beakfast in America" with you. Then maybe a few holes of golf, eh?

Neeps And Tatties:
Ingredients
1kg/2¼lb floury potatoes, peeled and cubed 1kg/2¼lb swede, peeled and cubed 85g/3oz butter salt and pepper Method
1. Put the potatoes and swede into a large pan of salted water. 2. Bring to the boil and simmer until tender. 3. Drain, season well and mash with the butter until smooth.
Re Skiing: I like the touch-lit descent idea by the way. Have seen it done, but only by ski-school instructors. Never had the pleasure myself. Might be a bit dangerous if one was to fall on one's own torch! Nylon coated ski jackets are flammable after all....
