Hi there, Would anyone have any ideas on what I could use to try to thicken casseroles or gravies etc? I have been NSD for nearly a year and I am soooo missing these sorts of comfort foods. I don't eat red meat, but am thoroughly sick of plain grilled chicken and fish! Obviously coconut flour or ground almonds don't work, but maybe someone has stumbled upon something? Any ideas gratefully received!  Cheers, Jo

hiya I've used guar gum.. have tested it with iodine and seems OK. Purchased from the Bin Inn. It's a bit of trial and error to get it right... can make sauces a bit gluggy and slimy if you use too much. Chelsea

Hi Jo, can you eat dairy? I made a salmon casserole with some yogurt and I made some fish with melted cheese on top and almond "crumbs." Have you read Carol Sinclair's book as I think she has a recipe for gravy? I can look it up if you like. Jan

Hi Jan, I have to be really careful with dairy... luckily I can eat chocolate and cheese with no problems :-), but if I eat yoghurt my gut reacts really badly. I do have Carol's book, but she uses cream or yoghurt to thicken, which wouldn't work for me. Cheers, Jo

When I make vege soup, it is 'thick' with veggies and I have found that lots of cauliflower thickens things up, you can even steam it separately, mash and add it in. A friend of mine uses cauliflower as she would mashed potatoes.
Also if you leave the lid off of the soup pot it tends to boil down and thicken up, as well as cooking for more than one day ie Day Old Soup, the second and third day is always much better. Yummo, I love veggie soup two days old......I put a big pinch of curry powder in as well, (if you can handle it)
