I have a small problem and i don't know how to solve it. I've tested all sorts of apples and from different sources (supermarket, farms, imported apples). They all tend to turn to a green-brown to brown with some shades of dark brown that can be in some cases assimilated to black. So i am a little bit confused. Are they starchy or not ?!?!

Have you added water to the iodine? I always dilute my iodine to be between 50-70% water. It still detects starch perfectly, but is easier to "read".
Also, did you see my note about chooseing apples from a week or so ago? I do not have time to restate, but check my recent post, as it may be helpful.

I think to pass the test, apples ought to show only the yellow/orange color of your iodine.
Are apples in season in your country? If not, I'm not surprised they are all changing the iodine color -- the local apple season (autumn) was the last time I found any that passed the test. Even then, there was only one brand of apple (out of about 10 I tested) that met this criteria.

Most of the apples I tested before were in the fall.... but last spring I found some apples inported from the southern hemisphere to test fine. If you have your heart set on apples this time of year give imported apples a try.

i tried all of them. the question was in fact if you people get the same reaction i've described from testing them apples or i am just going crazy.

So I guess the consensus is that you're not crazy; it's just nearly impossible to find decent apples when out of season

I do know that greenish color you are talking about. Dragonslayer told me a while back that it was a reaction to something in the apples and if it ultimately turns orange/brown it is fine. Give it 5-10 minutes. I would beware of anything too dark of your iodine is watered down. The way I test apples is taking a full disk right through the middle. I test from the core right to the skin, as I have found starch patches in different places.
I am appleless/fruitless since the fall because of the possibility of candida. I will try some berries this summer, but as apples have a ton of sugar, I will probably skip them for another season.
