SAUERKRANT - Is this OK on NSD. It is not cooked but part digested by bacteria. my understanding is that the bacteria in this works like a probiotic and is incredibly good for healing leaky gut and other gut problems

The one I am using only contain cabbage. I know cabbage is generally safe, but where my confusion is coming from is this issue about cooked vegetables and non-cooked vegetables. This food is not cooked but does fermentation have any affect? From my understanding it should have a good effect but I just want to make sure

Joanne,

Sauerkraut is a really good source of probiotics but like a lot of food on this diet, some can eat and some can't. If you can tolerate it, it is great for gut healing and a good cheap probiotic source. Some people swear by it and others can't tolerate at all. I have issues if I try to eat every day but I can eat a small amount once or twice a week.

I've found that the cabbage cores tend to test starchy by the almighty iodine. So...some naturally fermented sauerkraut batches are pretty safe and others not so. Sauerkraut is now a daily part of my routine. I found certain vendors that tend to have a better success rate with the iodine test, and pretty much stick to them. I no longer test with iodine, but have grown into the habit of throwing out pieces which look like they come from the core.

hi Freddie, can you buy Sauerkrant all ready to eat or do you have to make it?
is pickled vegetables & sauerkrant the same thing?

I buy some naturally fermented sauerkraut (no sugar, no preservatives, no vinegar). My favorite store bought brand is Goldmine (I think they're located in San Diego). Since I live so far away, I now tend to buy Alexander Valley (NorCal vendor) sauerkraut. Hopefully, there are some local vendors that make naturally fermented sauerkraut in your area.

But lately, I've been making my own in a fermenting crock. I ultimately bought a crock from the following place:

In hindsight, the 7.5 liter one is massive. I'm well enough now to lug it around and move it, but a year and a half ago, I would have killed myself moving it around.

Hi Joanne,

If you are purchasing and has probiotics, I would assume it is not safe... I purchased store bought "traditional" sauerkraut and had issues.

I made my own and did fine for arthritis... however, have to watch how much I eat or spending all day in restroom.
