So after reading on here that some folks can eat rice and be ok, I've gradually started including it into my diet, with no bad consequences so far. I even made risotto last night which was DELICIOUS since I haven't had risotto in five and a half months and have missed it! I'll see if I pay in a couple of days time...

For those of you who do ok on rice, do you just stick with white, or is brown ok too? Can you eat rice crispies, rice cakes or rice flour?? Or does that change the shape of the molecules?

Thanks,
Keren

Let us know how that goes, as I'm really wanting to add a couple starchy items to my diet to see how it goes (i've had green beans & courgettes so far, and haven't noticed a difference), and I wouldn't mind trying rice...

Hello, Karen:

After many years of NSD plus some antibiotics, much supplementation, and exercise, I no longer react to most forms of starch (so I am no longer a good food-tester).

But in general, when I was active but on NSD for some time, I could eat rice without consequences, however, rice flower is a very different thing and I would steer clear of this and anything else powdered. Particle size is an important factor in this, as a flour product is fully disassembled by the digestive process, and so becomes a massive (surface-area) colloid nutrient mass. Rice, on the other hand, is chewed to relatively large particles, offering fewer opportunities for our nemesis bacterium to jump aboard and start procreating! Consider a cup of rice might contain 5000 grains of rice, which enters the stomach as perhaps 20,000 particles. If first turned into flour, there are over 2,000,000 particles in the same volume; it is not the fact of the starch so much as the form, we could all eat quite a bit of starch if it were taken in just one big lump which we were not able to take apart through the digestive processes.

HEALTH,
John
