For me, even that amount of sugar would flare my IBD right up (with an AS flare to follow). I seriously swore off ALL cane sugar, beet sugar, corn sugar. I can't tolerate any of it. I never let myself cheat anymore, did a few years ago, a few times, but it kept causing issues. That little bit of sugar would also bring my candida gut overgrowth back for a party, which I thankfully knocked out years ago too. If you check out the SCD diet, they really, really drive home that fact for those trying to recover from candida, colitis and crohns a ZERO tolerance to any cane sugars and refined sugars must be adhered. It can set me back for a few days and cause me to be more sensitive to fruits, etc, like a damn firey snowball. There are some on here that can handle store bought dark chocolate, I am definitely not one of them. That is the whole reason I started my own raw foods and treats business, because I couldn't handle most of the stuff on the shelves. And you can totally use almond milk as a base for ice creams, but I again, only use homemade almond milk so I can avoid all the cane sugar, carageenan, additives found in almost all commercial almond milks. I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. Thanks Betty I will give that recipe a try. Sounds yummy! I recently went back to making my own almond milk, but as you may have seen in another post I let them soak too long atleast 24 hrs if not more. They had a frothy foam and smelled sour, so I had to ditch the whole batch  I will have to be more careful next time  I really do miss the chocolate. Unfortunately the raw cacao just doesn't seem to do it for me. Seems kind of bitter???

Sounds good! And I found that if you soak the nuts overnight then decide you don't have time to use them, you can rise them and keep soaking them for up to a week in the fridge without issue. Just rinse the soaking water every day or so. But ya, on the counter during the summer for 24 hours, I can imagine they got a little stinky. Hope you find some treats to enjoy soon!! Another option is blending raw macadamia nuts into your ice cream mixtures, full of good fats, totally starch free, and so delicious, and can help create a nice creamy texture. They are amazing in this "cheesecake", like really amazing! Hi Lulu, Yeah I saw you were sensitive to Coconut milk but I have a hard time believing its the coconut milk and not one of the additives they put it it. But then again everybody is different. Like Betty I stayed away from sugars as well. Anything that spikes your blood sugars or induces insulin can be regarded as inflammatory I think.

The coconut milk I was using was free of all additives. It was the Goya brand, no gums or thickeners. So unfortunately its the coconut

That sucks. I eat coconut cream every night and usually water it down a bit with coconut milk.
