So I discovered I am reacting to coconut milk as well as chocolate  I was loving using my icecream maker to make some homemade icecream with the coconut milk, dark chocolate, mint extract and maple syrup. I was eating almost every night, perhaps that was the issue, lol.. Any way I need some alternatives...I find I am so reactive to everything it is discouraging. The only vegs I have are spinach and cukes. I'm feeling tired, perhaps not enough carbs??But I can't tolerate any..

Is your coconut milk pure or does it have sulphites , guar gum or other stuff in it - some brands even put cane sugar in ... Can you use virgin cold pressed coconut oil ? Or even coconut cream ( I can get this in a jar with nothing else in it and it is delicious ....might try making ice cream with it too ?! I have had problems with coconut milk too but have deduced it is the other ingredients I cannot tolerate -:) Frustrating when so many things are not tolerated !!

I have many allergies and intolerances- I follow a celiac/fructose free diet. I also have an anaphalatic allergy to sulfites. I started a small group called Fructose Intolerance/Metabolic Disorders Canada. Since being on the celiac/fructose free diet I am not as bloated, and am starting to loose weight. Been there done that... enjoyed something on diet only to learn it was causing me pain.
I do not understand why such limit on veggies... veggies should not be much of an issue. Do you have food allergies?

Hi Tim, in my case when you are dealing with fructose malabsorption/intolerance, any vegetables that have fructose/fructans in them can cause major issues. I have been diagnosed with fructose malaborption, I have severe bloating - my diabetes was uncontrollable - sleep apnea in severe range - liver enzymes elevated - these are only some of the issues (also severe IBS issues) I have to deal with when I don't watch the vegetables/fruit/wheat in my diet.

Don't use full fat coconut cream to make ice cream. It freezes rock hard! And it will start freezing in your icecream maker before you have time to even press the button to get it started (depending on maker) due to the high fat content.
I find it best to use Coconut milk (50% milk, 50% water) with as least additives as possible. I tend to use Kara UHT coconut milk.
The recipe I use comes out awesome and I eat a ton of the stuff at times.
1 x 400 gram can of coconut milk 4 x eggs (whites and yolks separated) 125 grams of melted dark chocolate 3 tablespoons of Vodka (helps prevent over freezing) 1 tsp of vanilla essence 1 Tbsp of sugar and 1 small packet of Stevia (equivalent to 2 tsp of sugar but tastes a lot more than that to me)
Mix coconut milk, vanilla essence, melted chocolate, vodka, stevia and egg yolks together until well mixed using an electric beater.
In another bowl whip the eggs whites with 1 tablespoon of sugar into a stiff frothy mix then fold it into the chocolate coconut milk mix so that its a nice consistent texture.
Then I finish it off in a basic cheap icecream maker for 30 mins before transferring to storage container and putting in freezer to finish it off. I usually take it out of the freezer and put it in the refrigerator an hour before wanting to eat. Its lovely stuff!
Adjust the sugar to suit your own taste requirements but I find with coconut milk, it provides a sweetness anyhow so you don't need much sugar.

You listed "dark chocolate" does that mean a storebought dark chocolate bar made with cane sugar and soy lethicin? If so, that would send me into a nasty flare instantly! With my IDB I cannot go near cane sugar or soy. But I can eat all the pure cocoa/cacao powder I want (honey, maple syrup, coconut sugar all safe for me) but agave is another one that can "feed klebsiella like wildfire".
I have found for me if I continue to eat foods that cause inflammation for me, like tomatoes, hot sauce, soy, cane sugar, the inflammation from those foods can create new food intolerances to other foods I eat with them. For this reason, I keep it super simple, and avoid anything that causes even the slightest inflammation, as I cannot afford to develop any more foods allergies. No way Jose!
There are lots of delicious sorbet recipes, but I guess those won't do you any good if you aren't eating any fruit? I have one on my website that is really popular made with: frozen raspberries, avocado, lime juice, (honey or stevia), vanilla, this one is ready instantly w/o an ice cream maker. It's awesome. I also make peach sorbets with almond milk and honey, using the ice cream maker. Blueberry sorbets, etc...

I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. I was using Green and Blacks dark chocolate 85%, organic cocoa beans, organic sugar and organic vanilla..no soy, I made sure of that as I can't tolerate any. Do you think the organic sugar could be the issue?
I do eat fruit, but find I tend to fo overboard with it.
Will the icecreams work with almond milk?
