This is a good question and I have had this problem for several years. As a Catholic I have to give the "sign of peace" which is usually shaking hands. When my fingers first began to play up, I used to wear supports on my hands and wrists. This stopped some people from squeezing my fingers, but there was one couple who squeezed my fingers despite the supports. On top of this, one man squeezed my fingers need my thumb so hard that I nearly folded from the pain.

I solved this situation by moving away from the people concerned, and refusing when necessary to shake hands. After talking it over with my parish priest, and the assistant priest, I adopted the "Hi Five" method of shaking hands. If someone tries to grip my fingers, I tell them "NO" and I withdraw my hand. I do this for the ones who tend to squeeze my fingers because I cannot stand the pain.

On the bad days, I use my arthritis gloves which gives them the hint that there is something wrong. This does not go over well if I am starting a new role so I have to avoid the gloves and hope that the other person does not squeeze.
