I was very strict NSD at first, but the more I studied, the more I moved to a paleo-type diet(check the links in my original post). When I really kept my carbs low, I started being able to sleep, and that's when it all really started turning around.

I stay away from all fried foods, and try to eat red meat over poultry because of the omega 6 to omega 3 imbalance. I wasn't really able to eat grass-fed meat much, but I supplemented with fish oil. I took a bunch of vitamins at first, but now I'm down to mostly just fish oil and vitamin C. I also supplemented with vit D at first, but for the last few months have just made sure to get plenty of sun.

About the dairy...I stayed away from it at first. When I started shifting towards the paleo diet, I reintroduced dairy in the form of hard cheese and half&half, which I drink like milk. Yum...
