I have been so impressed with all you folks... you definitely motivate me! I'm going to be going back to work in a week, so have already been planning on salads for dinner pretty much every night after work. I guess I'm forgetting about all the yummy "meats" that are out there... fish, etc. My husband loves fish, so I think I'll try adding more of that to our diet. I like your suggestion, Meredith, to eat pretty much the same thing, but add a starch for him. The other night I did eat a bunless hamburger wrapped in lettuce, tomato, pickle, etc.

I know red meat can be bad, but I am seriously anemic also, so I do eat it occassionally right now.
