A tough question indeed. Your present diet might be my own, had I not become so sick from AS. You eat what one fellow refers to as the perfect arthritogenic diet. One of his suggestions was to measure bowel transit time by taking about 6 charcoal tablets in the middle of a meal.

Optimal time is 12-14 hours but many arthritis, in general, expel the waste in twice that amount of time.

If the job is demanding and you really need a few hearty meals, then advance preparation is key. Although I advocate an anti-inflammation diet, the Campbell regimen (Medical Center section) might be a solid option for you to begin with. If you can eat several smaller meals during the day, that would be the best course.

Depending upon your personal situation, you might start a very strict NSD with a fast or fruit monodiet (the apple diet is best), then be strict for several weeks, if the pain is decreasing--then reintroducing some LSD-variety of starches might be acceptable.
