Thanksgiving is the one Holiday I enjoy. I cook for three days, I eat and then sleep for two days. I grew up in New England so Thanksgiving consists of Turkey Yams, Candied Yams, Carrots, Candied Carrots, Potatoes, Homemade Mashed Potatoes, Scalloped Potatoes, Pies, Breads, Green Bean Dishes, Stuffings..... You get the point. I also started the LSD. So my question is how do I do the holiday without pounds of starch? Any menu ideas would be helpful and thanks ahead of time.

Do you have the Sinclair book? There are several recipes for no-starch stuffing, and I think there's a gravy recipe as well. Also, try creamed cauliflower instead of mashed potatoes. Similar texture, and it tastes really good too. Winter squashes would fit in well for a thanksgiving feast, and although they do have starch, it's relatively low.

Turkey of Course! (we never stuff the turkey, moister without stuffing)
Chestnuts, other nuts
Broccoli or spinach or other green veggie or a salad
Pumpkin Custard in the Ramkins (essentially the pie without the crust)
Maple Custards (just milk, eggs, maple syrup, nutmeg)
Homemade Applesauce or
Applecrisp (mostly apple, a little crumb topping made with oatmeal, sugar in the raw, canola oil, cinnamon, nutmeg, allspice)
Cranberries (just cranberries, sugar, and water)
Lima Beans
Wild Rice (a better starch alternative)
butternut squash soup

Thank you both. I will try this. Today I also went through all the NSD recipes. I found lots of good ones. Thank you to everyone who gave recipes.

Thanks good idea. I have already suggested salads and was told sounds great. It should be a creative holiday this year.
