This is rather interesting also -

Lectins in food and relation to starch digestibility
Lectin concentrations of 16 foods and total lectin intakes in test meals were related to glycemic responses to the foods in normal and diabetic individuals. Lectin concentration showed a significant negative relationship with glycemic response in both normal and diabetic individuals suggesting that lectins may play a role in determining the rate of digestion of carbohydrate. Similar relationships were also seen between lectin content and in vitro rate of digestion indicating that lectins may affect the luminal stage of digestion. Kidney beans cooked for 30 min which contained lectins were digested more slowly in vivo than beans cooked for 60 min which contained no lectins. Both cooked beans had digestion rates lower than lectin free white bread. Kidney bean lectin added to white bread reduced the rate of starch digestion in vitro. Lectins may account for up to half the difference in digestibility between kidney beans and bread.

So it seems that the higher the lectin content of food, the less digestible the starch is. With a low starch diet it could be beneficial to get your starch from foods with a lower lectin content.

Not only best to avoid lectins because the carbs will digest faster, but especially stay away from lectins that hinder repair of the gut (bean and wheat lectins seem worst)

my instincts tell me this kind of information seems to hide a more deeper cause on the causal chain than the kb & starch stuff.

we all know that starch & kb are at the bottom of most of our problems - but this might make us understant why...

and also might explain why some of us do not tolerate some almost starch free veggies while some other certified starch food is almost harmless to some.

UC curently in remission since feb 2011.
AS/USpA remission march-aug 2011. Flare - sept-nov 2011 (antibiotics). Remission now...

Seems lectins interests more HLA class 2 antigens - and it's possible to be involved in rheumatoid arthritis& celiac disease.

Very, very interesting!

I have one hell of a job digesting beans and wheat (they are the worst starchs for me).

I saw a TV programme recently saying that excessive flatulance is caused by undigested food in the gut - we all know what beans are famous for don't we?! lol

I think this theory rings very true.

I have noticed lectin listed in lots of foods, now I have been looking out for it.

She said this was new info to her and she had always told her people to be gluten free and she felt like this was "the missing piece of the puzzle"
Much of that stuff is starchy smile
It was this HUGE article and she said she was using all her printer paper giving it to her autoimmune patients.I think I will bring her a package of printer paper next time.She's always sharing good stuff.

She sounds cool! Fingers up to her paper allowance, patients health comes first!

Glad you are not in too much pain at the moment.
I'm doing well too, thanks - any little starch slip up and I'm in pain though. Am being stricter than stricter that strict!

I have a friend who is trying to lose weight - she is struggling to stick to her regime and cannot believe how much stricter mine is. As I told her, though, if someone whacked her in the back with a big stick everytime she slipped up (equiv. AS pain) she would have far less trouble!!! lol!

I always love reading your posts, Shauna, you always say things that help me in some way. The info about your doctor has really put a smile on my face. It's great that you have someone like her on your side, hon.
