I just thought I'd share this recipe I found. This bread tastes really good and can be used for sandwiches, toast, etc. I tested it with iodine and it came out starch free!

Prep Time: 5 Minutes

Ingredients:

2T butter/margarine
2 eggs
4T flax meal
1/2t NSD baking powder (2:1 Cream of tartar:baking soda)

How to Prepare:

Melt butter. Add other ingredients and mix until smooth. Put in a microwavable container, about 4" x 5", and microwave for 3 minutes. Turn out and let cool.


You can also make larger batches and put them in glass bread loaf dishes, but you have to microwave for longer. I hope you guys enjoy this as much as I do! I can eat sandwiches again! smile

Hello there

What is flax meal and where can you get it? Never heard of it before...

Bread that takes 5 minutes to prepare, 3 minutes to cook, is a texture suitable to make sandwichs and tastes good? You have to be kidding me eek2 laugh2

Flaxseed meal is great stuff, do try to find some!!

Flaxseed meal has become one of my staples -- best source of fiber I have found (keeps my digestion happy without setting off AS flares)

Thanks for the link there SJLC it looks like they have all sorts on that site (still not got my hands on any coconut flour yet!)

I wonder if they deliver to Europe... probably not and probably expensive I bet.

Coconut flour is catching on in one supermarket in certain parts of England... that is as good as it gets for now! Of course, living in France - you can't get anything out of the ordinary at all!

Ah ha!
Just done a little bit of googling and found out it's called linseed in UK not flaxseed.
They sell it in healthfood shops and supermarkets.
It's pretty pricey though!
Still if you don't need much at a time then I suppose it is worth it.
Will defo get hold of some.

Thanks for putting this out there - I had never heard of this. And didn't realise there was anything else safe on the NSD that could be used for cereal/baking! Great stuff grin

hey sjlc,

i posted a similar ? in main forum post. just trying to clarify. in this link it shows 'organic golden flaxseed meal' in the main you linked 'ground flaxseed meal' . which is the one you use?
im not trying to be a pain, its just that other ppl do my shopping and if they get the wrong thing, im left waiting another week or so to exchange it. . thanks in advance :]

No problem sunny -- I've used both, and the nutritional info looks identical. Maybe some people would have a preference, but I don't really care between the golden or brown.

You're very welcome! I was quite shocked myself when I tested it the first time and found it was starch free. Living in the US, all the supermarkets around here have flaxseed in either the cooking or "healthy living" sections. Pretty soon I'm going to start experimenting with the recipe to see if I can make different bread-like goods. If anybody has any successful recipe variations, I'd be very interested in hearing them!
