I've been making 1.5x the original (Scuba Steve's) recipe with almond meal, or 1/2:1/2 with flaxseed/almond and microwaving on 80% power for 4 mins - cooked in a plastic tub. YUM! Smells pretty *eggy* when it first comes out, but it's nice and moist. Have tried dropping the oil/fat content and it's dry and nasty... It's OK with just egg whites, but you've gotta keep the fat content up to keep it moist and having a soft mouth-feel. It's good for breakfast or lunch and it's a great vehicle to get my beloved Vegemite into my mouth again!!! (it just wasn't the same smeared on a slice of tasty cheese...)

hey yall,
ive been stirring in some raisins to the bread mix and then sprinkle some on top before cooking = raisin bread. lather on some butter .. pretty good!

I have been making this bread for years on low carb programs I have followed but I am just wondering, are we not allowed to have the baking powder (even though it's only 1/2 teaspoon)? And with the 2:1 ratio of cream of tartar:baking soda how much of each does this mean you would use to make up only 1/2 a teaspoon?

i know its prob out there somewhere but i was thinking...
i make mine in a round ramikin and i half that recipe for single serving. i bet if u mess with baking soda or tweak it somehow (use huge eggs?) this could turn out to be more like a bran type muffin? theres all kinds of flavorings out there, even banana! banana bread muffin? orange cranberry? lemon with real whipped cream on top? OMG!!!! lemon with cream cheese ICING? HA HAh HA Hoooo!! i NEED something good and im teasing the crap outta myself lol apple muffin ala mode? tongue wag!!!

in my raisin bread ive got it just right i think now.
halve the recipe then add a lil vanilla extract (when u mix egg) 1/2 packet stevia in the raw (with other dry ingredients) at the end stir in a handful raisins then sprinkle more on top otherwise they all sink.
also like to make this in an oval shallow dish, minus raisins, for a nice italian bistro style chicken salad sandwich with grated parm and romano cheeses. really nice!

ok so i attempted a simple orange muffin atop a slice of pineapple (next time ill put pineapple in bottom of ramikin befoee cooking) topped with cream cheese icing. O My gooooodness. suprisingly good!! ill mess around a bit and post a recipe once/if i perfect it. i havent had something like that in about a year. soooo good. will do lemon tomorrow
