IMO, shredded coconut has a much better flavour. Dessicated coconut is like the sweepings off the floor... I buy the shredded stuff and grind it up up whatever consistency I need. (but it's not a sub for CCN flour - that's like a very fine powder...)

I just looked into prices the other day, and Dr. Mercola's website sells it the cheapest....cheaper than Tropical Traditions. He sells 3 2.2LB bags for twenty-something....Guess that is alot of coconut flour to buy if you're not sure it'll work for you or not. My hubbie bought me some coconut flour the other day, and I intend to make coconut bread later this week. Will let you know how it goes for me.
Corn is starch and maltodextrin has corn in it, as well as the corn syrup, which is one of the worst things you could be putting in your body right now if you have inflammation. You might try a couple weeks or more off of any processed/refined sugar and see if it makes a difference.

I'm not going to tell you not to order 3.2lbs or whatever from Mercola, but Amazon sells multiple brands. Lately I've been buying Azukar Organics. The have both 16 oz and 32 oz bags that I have seen and have different ordering options (singles, three pack, six pack). Three pounds does last a little while if you are not a frequent baker.

Well I got 1 bag from iherb Let's Do Organic b/c I don't wanna have a load of it if it turns out not to work for me.
I made the chocolate chip cookie recipe kiwi posted in 2009 and I only ate one to see how I'll do.
1. I didn't have an allergic reaction which I am thankful for as I have many allergies and cannot eat tree nuts. But I guess technically coconut is a seed not a nut. But pistachio is technically a seed too and I ate 4 of those when I discovered I had grown allergic to them.
2. I ate it 3 hrs ago and I'm waiting to see if it bothers my AS. Usually it only takes an hour or two. So far so good.
3. Previously I stated that I took one bite of coconut cream pie and flared something terrible. I now think that it was the cream/sugar combo and probably ultra pasturized cream with carrageenan which is awful for me too. Double whammy.
I have seen where some don't flare for a few days so I fear that and fingers crossed I'm ok with it. It would be dreamy to be able to incorperate this into my very limited food list.
Thanks for your guidance in buying/finding this stuff.

Hey kiwi,
Did Jon eat the coconut flour when he had candida issues?
Also, a little off subject, was he able to eat the white grapes during candida time? I think I remember you saying he always did the grapes instead of apples in a flare.

Hiya Sunny,
No we hadn't discovered coconut flour back when Jon had Candida issues. So I'm not sure if it would be a problem for someone who did have Candida - possibly as it does have some natural sugars in it. However, apparently coconut oil fights candida so there may be some benefit there altho that benefit would possibly be better gained by taking pure extra virgin coconut oil daily.
He was off all sugar, fruit, nuts, dairy, vinegar, mushrooms etc and did the candida diet for about 9 months to a year after using antibiotics for 3 months triggered the problem.
He definitely did not eat grapes during that time as would just feed the fungus.
