i hear people talking about chocolate and im confused.. it seems like all chocolate has starch.. am i wrong? (i hope so!)

Yes, I imagine all choclate is starchy to some extent since cocoa is a bean. Other 'irritants' in even good chocolate (as few ingredients as possible) could be soy lecithin, used as an emulsifier in most brands.
I can't eat good quality chocolate without 'feeling it' the next few days. Others can though it seems.

Soy lecithin is not starchy. The cocoa solids in chocolate are starchy but generally the actual starch content as a whole of chocolate is low. Jon eats Cadbury milk chocolate and according to the nutrition panel it has total carbs of 57.4% of which sugar makes up 56.2% - so that leaves 1.2% starch. So not very starchy at all. He does better with milk chocolate than dark - due to less cocoa solids. White chocolate is even better as it has no cocoa solids in it - just cocoa butter so not starchy at all. The dark chocolate has way more cocoa solids and is therefore more starchy. I don't get it why a lot of people around here are always wanting to eat the super dark stuff as it kind of seems obvious that it would be more starchy  . And it's so bitter - yeeeechk  . I know it's supposed to be "good" for you what with the extra antioxidants due to more cocoa solids but the extra starch is not good for you. The only other reasons some may have trouble with chocolate is the dairy content if they don't tolerate it or if they have sugar issues (candida). If you don't have those problems then you should be fine. I'd say go with white to be safest and don't overdo it. Hope that helps.

yeh, i can't do milk, casein is a bigger problem for me than any other food stuff.
i like dark chocolate, but love good white chocolate. Found a white chocolate with coconut in it; to die for! But I don't buy it often, as its too good and i always eat too much.

Not a problem for my AS but.. Confectionary irritates my prostate for some reason. Milk chocolate definitely makes it worse, as does coffee .. but it is not the caffeine. Also too much meat & not enough veg is also an issue.
I find that with chocolate I get a short buzz and then a long sleepy low. The "long sleepy low" doesn't seem to be due to cocoa though.. seems to be the sugar and fat not getting digested / absorbed well or perhaps dysbiosis.

I eat Raw Organic Cacao almost daily. I buy raw organic cacao powder and raw organic cacao butter and then make homemade raw chocoaltes with a little bit of honey or coconut sugar. They never give me any problems. I melt them down in my dehydrator, there are some chocolate recipes on my website.
I also love to make homemade hazelnut milk and blend in some medjool dates and some cacao powder and ice for a "chocoalte milk shake" it is the bomb and loaded with magnesium & potassium to make your whole body feel good.
But I find that if I eat a sugary dark chocoalte bar from the store I feel gittery and my joints get tingly & achey from all the refind sugar! Icky. So I just make a batch of my own chocolates about once per month and keep them in the fridge for a treat. Becuase they don't have the refined sugar, they are not nearly as addicting as store bought chocolates.

I've been trying to get used to dark chocolate for the antioxidants etc, but it's just not the same and it's great to have an excuse to go back to Dairy Milk  I ate too much Old Gold (which is 70% cocoa) last night for the first time and my gut was not happy and I was still bloated this morning, and was wondering whether the chocolate had something to do with it. Old Gold 70% has a lower 36.4g carb per 100g of which 27.7g is sugar, which does leave quite a bit of starch.

AS, IBS, reflux oesophagitis and dysphagia, PCOS/insulin resistance, asthma... Currently managing my AS with humira, methotrexate, low starch diet and exercises. Also taking omeprazole, metformin etc.

I make my own "white chocolate" with raw cacao butter, ground sprouted skinned almonds, and a sweetener like date paste or coconut sugar. You can also play around with using coconut (shredded or creamed). The cacao butter (cocoa butter) is the fat/solid pressed/extracted from the cocoa bean and does not contain any color or caffeine. This recipe is also allowded on the SCDiet, where regular chocolate is not.
