Hi all !
I have a journal of all my food intake And my pain Lebel Trying to make a correlation between them. I talked to my doc this morning about how long it takes to get in pain after eating something wrong? Starch for example
My Doc told me that it CAN take a week maybe 10 days before geting a reaction from an intolerance .
What about you ?
Tell me your experience please
Thank you

i keep a food journal since feb 2010, when i've started the diet.

helps a lot.

for me it takes about 24 to 72 hours to get a reaction from a bad food.

the catch is to find some foods that will lower the inflammation - even if at the beginning there are so so few - then experiment with max. 2 new entries per week.

after 3 years i am still using this diary every day.
i know most of the foods that i must avoid now, but i am starting to tolerate others that 3 years ago were a problem. for example almonds. from 0 gr per day to 250 gr per day.

i mostly eat:

pork
chicken
turkey
fish
cheddar or any other hard cheese with no lactose in it.
almonds
grapes
apples (rarely and low in sugars)
blackberries or other "forest fruits"
all greens
carrots
tomatoes
celery root
beetroot
peppers

i drink coffe sweetened with honey and about one bottle of dry red wine per day.

all food is bought raw and cooked in my home. when i go to a restaurant i buy only simple foods.

it's not exhaustive, but this is where i mostly hang around.

as you can see - i flared from antibiotics. will avoid them in the future at all costs (except maybe a life threatening condition).

i react to foods reach in sugars (especialy fructose). it's easy to check that fructose is a pro-inflammatory sugar and thus must be avoided by those with inflammation in their bodies (see
beverages like coca cola or pepsi or similar...).

for me it took more than an year to obtain a manageable condition with diet. probably a combination of bad food choices, stress and a over-reactive immune system. some are more lucky. but i managed and now i live an almost normal life for my standards.

yes. it's verry hard fo find those offensive foods. keep in mind that what you might not react to today can induce a flare in a couple of months. one gut's flora is in a continuous change (especialy those with IBD like me, thus one always must be carefull...).
