Thanks Molly, I like the article. I have been paying closer attention to GMOs. I feel awful after eating corn, soy ,dairy & grains. Do you think there is a study done on mice that shows the effects of GMOS on the immune system? I wonder if the mice get arthritis when they eat GMOs?
Diet change has improved my RA. I feel best eating raw veggies and some fruits and avoiding grains, sugars, nightshades, beans and dairy. Is it the GMO's? Or is it the fact that many GMO's (especially maize and soy) end up processed to death so you are never eating the whole grain, but very fractionated and unbalanced parts of it?
Coeliac disease started to do a huge rise in incidence I think before GMO's became far more common, but a while after highly processed foods became things we ate every day. Peanut allergy became far more common around the time that peanut paste became commonly used as an emulsifier in processed foods (no longer used now, because of the allergies) so instead of just getting peanut occasionally we were getting it every day in one thing or another. Maize sensitivity/allergy is now starting to show up far more in people who also have coeliac disease, and guess what replaces wheat in a lot of gluten free products? Yes, maize - which means that coeliacs get far more processed and fractionated maize every day than other folk, though unless you ate a whole food diet you would be hard pushed to avoid maize even when you were not on a GF diet.
My mantra is therefore to avoid GMO's, eat local, eat seasonal, eat as varied a diet as I can, and cook whole ingredients from scratch as much as I can. That way I get seasonal variations (not eating the same foods day in and day out), and minimise the highly processed stuff. Can't always stick to the ideal, but thats my goal.

Monsanto is the main culprit in the GMO push. I don't think they have tested their products well enough before making us the guinea pigs. Even if it is safe, then why be so against labeling items that are GMO products? Will people choose not to eat their stuff and kill their investment? Monsanto in order to protect their products have lobbied long and hard for their positions. They have even sued farmers for allegedly saving seed which is against the Monsanto contract when buying their seeds. It turns out that after some research, it seems that wind-born pollen has spread into fields of other farmers. So the plaintiff (Monsanto) has now found themselves to be possible defendants in what is called "genetic contamination." But, they will not be defendants for some time since Congress in their wisdom has made it illegal to sue Monsanto for a certain period of time. The lawyers are lining up most likely and when that time expires all those who are affected will demand a day of reckoning in dollars and cents.
If all of this is truly gut flora issues, I have seen documentaries and read some reports that genes spliced into these plants are finding their way into the flora that populates our guts and that change may be the cause of our problems.

This may be a dumb question but does Gluten Free products contain starch?

Yes, samzee they can contain starch, and can contain much more highly processed forms of starch, as they need to play around with other grains a lot more to get them to do what the gluten in wheat does, and provide a comparable product to the gluten containing versions.
