Hi guys, do any of you know a good starch free thickener for use in sauces, dressings etc? I've searched the forum and can't find anything, I'm really missing this in my cooking.

Also is anyone that avoids dairy OK with Kefir or is it just as bad as milk or yoghurt etc? I know it's full of lactose still (I can't find a lactose free Kefir anywhere near me) but I know some people drink it still. I'm trying to come up with a starch free high calorie shake to up my calorie intake a bit.

I asked this question about thickening sauces years ago and John the Dragon suggested adding bentonite - a clay mineral. I didn't try it. These days I save the juices from roasts and add passata which at least makes a rich gravy.

My kefir is all Lactose free. Even buy it at albertsons.
