That sounds pretty different from what I know as cinnamon, which is really cassia

I suspect even the real stuff still has some starch, though maybe not detectable levels -- I discovered that the iodine test does not detect small amounts of starch in dried lemon peel spice for instance.

However:
small percentage starch per spice * small amount of spice used = very small amount of starch

So I went ahead and used the stuff for my 4th of July family dinner contribution anyways wink
