Ok here's another recipe:

Smoked Mackrel with tomato sauce

Wrap some smoked mackrel fillets in foil with a knob of butter and bake in oven for about 20minutes at 180 C, while you make the tomato sauce.

To make tomato sauce:
Put 4 - 6 tomatos in dish with boiling water to remove skins.
Gently fry a crushed clove of garlic in oil for about 30 seconds, then add peeled and chopped tomatos, 2 tsp balsamic vinegar and 1-2 tsp sugar (depending on how sweet your tomatos are). Season with salt and pepper. Cover and simmer for about 10 minutes.
Take off heat and stir in 1 tablespoon basil and 2 tablespoons parmasan cheese.
The sauce should be quite thick, so reduce if necessary.

To serve:
I usually make either creamed potato or new potatos for the family and extra veg for me.

Spoon some sauce into the centre of the plate and place fish on top. Arrange green vegetables eg, asparagus or broccoli around the fish and scatter the potatos around in the same way. If using creamed potato, I would put that in the centre of the plate and put fish on top and serve tomato sauce in little mounds around the plate.
