i keep a food journal since feb 2010, when i've started the diet.
helps a lot.
for me it takes about 24 to 72 hours to get a reaction from a bad food.
the catch is to find some foods that will lower the inflammation - even if at the beginning there are so so few - then experiment with max. 2 new entries per week.
after 3 years i am still using this diary every day. i know most of the foods that i must avoid now, but i am starting to tolerate others that 3 years ago were a problem. for example almonds. from 0 gr per day to 250 gr per day.
