The Iodine is to use to test food for starch. In the presense of starch, the Iodine solution turns blueish-black. I have never tought that it was worth the effort. Lately, I've had to reconsider.
On each of the last three weekends, I've been a little careless and have accidently ingested starches. This last being the worst. I made a nice spicy sour cream vegatable dip and did not read the label on the sour cream container. The second ingedient was me nemisis--Modified food starch--arggh. The little flare-up caused by a small amount of starch in my usual vegatable, protien, dairy and chocolate diet should subside tomorrow or the next day. Nothing like a good kick in the AS to get my head out it. I'm also begining to wonder if too much chocolate could be violating the "Moderation in All Things" rule as well.
As for Iodine in salt, I would not recomend it. I am not a nutrition expert, but do not believe in supplementing by adding things to otherwise harmless ingredients. You won't find Flouride in the water I drink either. Hope my opinion is useful, as I tend to assume as well
